Joining the team in February 2021, Head Chef Rosco Deacon brings a wealth of hospitality experience to the Maraboon having worked at The Vue in Darwin's Mindil Beach Casino Resort, Clarion Hotel Mackay Marina and on Long Island located in the picturesque Whitsundays.
After spending time travelling and working around Australia, Rosco stumbled upon the town of Emerald and our beloved Maraboon Tavern. The venue's strong reputation amongst locals was a big draw card, with the in-house smoker also playing a vital role in his decision to join the team as Head Chef.
